Dried porcini
Our dried porcini mushrooms (boletus edulis, boletus reticulatus, boletus aestivalis, and boletus pinophilus) undergo specific drying processes, thanks to which they retain their precious nutritional properties, and are available in different types: Extra (only slices and/or sections of complete cap and/or stem, flesh colour from white to cream), Special (sections of cap and/or stem, flesh colour from cream to hazel), Commercial (mushroom sections even in pieces with crumbs - no more than 15% - flesh colour from light brown to dark brown), Crumbs (mushroom section fragments of sufficient size to identify the species to which they belong).

Preparation
Rehydrate the porcini mushrooms in warm water for about 20 minutes prior to use, then cook in a pan over low heat. Dried porcini mushrooms are particularly recommended for enriching the flavour of risottos or first courses. To be consumed after cooking.
