Similar to the honey mushroom, except for the yellow ochre colour of its gills and its absolute edibility, the nameko (Pholiota nameko) is a tasty mushroom that grows in the summer and autumn, and is particularly common in Japan, where it’s used for soups and Soba. Their mild, pleasant flavour, which is able to be perfectly preserved using modern freezing techniques, renders them an ideal garnish for numerous dishes.

Preparation
Rinse the frozen mushrooms under running water, then cook them in a pan for about 15 minutes over medium heat: the Nameko mushrooms will soon be ready to garnish your risotto or to serve as a tasty side dish. To be consumed after cooking.
