Dried shiitake
Originating in the Far East, where it was an indispensable part of the Japanese diet for centuries, the shiitake mushroom (Lentinus Edodes) is one of the most beneficial woodland products, as it contains vitamin D and helps fight bad cholesterol. But its flavour is also very much appreciated, especially if included within soups or broths.

Preparation
Rehydrate the dried mushrooms in warm water for about 30 minutes prior to use. Depending on the recipe you’re using and the desired cooking method, they can be sliced, diced or used whole. Cook the Shiitake mushrooms to your liking (e.g. sautéed over low heat for about 15 minutes) and serve them as a side dish, seasoned as desired, or else add them to a risotto or pasta dish. To be consumed after cooking.
