Dried chanterelles
The Chanterelle (scientific name Cantharellus cibarus) is a mushroom that has no reason to envy the porcino in terms of preciousness and popularity. With their large, jagged caps, firm, white flesh, golden colour, and intense aroma that unleashes all of its aromatic potential during cooking, chanterelles are ideal for a wide variety of recipes in the kitchen, from soups to risottos.

Preparation
Rehydrate the mushrooms in warm water for about 30 minutes prior to use. Cook the dried chanterelles as desired (e.g. sautéed over low heat for about 15 minutes) and serve them as a side dish, or else add them to risottos or pasta dishes for flavour. To be consumed after cooking.
